Red Onion Chutney

 
Ingredients :
 
1 lb red onions
Olive oil  2 tbl
Star Anise
Balsamic Vinigar 50g
Soft Brown Sugar 50g
Chillis (optional)
Bay leaf (optional)
 
 
Method :
 
Chop onions finely, also leaving half circle rings
Cook onions for 20 mins, untill lightly caramalized
Add everything else, cook for another 30 mins
or until 3/4 liquid is evaperated. Cool, jar and seal.
 
Storage and serving :
 
Store in fridge for up to 4 weeks.
With cheese, ham, cold meats.
